Warm.Creamy.Nourishing.Tasty. Who doesn’t love a bowl of porridge on a cold winter morning?
I stopped eating porridge when I switched to a gluten free diet but later discovered quinoa works brilliantly as an oat replacement and is nutritionally superior as well. Quinoa contains higher levels of protein, fibre and essential vitamins and minerals when compared to oatmeal. The addition of ground chia boosts the protein and fibre content even further. This delicious bowl of porridge packs a powerful nutritional punch and will keep you feeling fuller for longer.
I have topped my porridge with sliced apple and chopped activated almonds but you can get creative with a variety of fruit and crunch combinations. Try sliced bananas, chopped figs, dates, coconut flakes and different nuts and seeds. Don’t forget the extra honey drizzle!
- ½ cup quinoa + 1 cup water
- ¾ cup milk
- 1tbs raw honey
- 1 granny smith apple, grated
- ½ tbs ground chia
- ¼ tsp cinnamon
- ½ granny smith apple, sliced to decorate
- Activated almonds, chopped for sprinkling
- Prepare the quinoa by rinsing under water to remove grittiness. Place in a small saucepan with water, cover and cook for 15 minutes or until moisture is absorbed. Remove from heat and place a paper towel between the pot and lid to absorb moisture. Fluff with fork.
- Add milk, grated apple, cinnamon and honey to quinoa. Simmer for a few minutes for a creamy texture. If more milk is needed, add as required.
- Spoon into serving bowls. Top with sliced apple, almonds and a drizzle of extra honey.
- 250g water
- 100g quinoa
- ¾ cup milk
- 1tbs raw honey
- 1 granny smith apple, quarted
- ½ tbs ground chia
- ¼ tsp cinnamon
- ½ granny smith apple, sliced to decorate
- Activated almonds, chopped for sprinkling
- Grate apple for 5 sec/speed 5. Set aside.
- Prepare quinoa by rinsing under water to remove grittiness. Place water and quinoa into mixing bowl and cook 15 min/100C/speed 2.
- Add milk, apple, cinnamon and honey to quinoa and cook 3 min/90C/speed 2/reverse mode. If more milk is needed, add as required.
- Spoon into serving bowls. Top with sliced apple, almonds and a drizzle of extra honey.
