Green Goddess Dressing Recipe

Green Goddess Dressing

This dressing is a gardener’s dream – green, herby and vibrant. It tastes delicious on just about every vegetable salad combination. For a lower fat version use low fat yoghurt and omit the olive oil. Enjoy at your leisure, but trust me it won’t last long in the fridge.

Green Goddess Dressing
Serves: Makes 1 cup. Stores for 3 days.
 
Ingredients
  • 3 tbs natural Greek yoghurt
  • ½ avocado
  • 1 garlic clove, chopped
  • 2 anchovies
  • 3 tbs lemon juice
  • Handful basil leaves
  • Handful flat leaf parsley
  • 1 tsp sea salt
  • Pinch cracked pepper
  • 2 tbs extra virgin olive oil
Instructions
  1. Blitz all ingredients in a food processor or Thermomix (8 sec/speed 6).
  2. If you prefer a runnier dressing add more oil. Adjust seasoning to taste.
